Made famous by the Marble Slab brand, these marble table tops are kept at freezing temperatures while employees break pieces of candy, nuts, and other treats into the ice cream and continue kneading it over the slab to keep it frozen instead of melting. Essentially the same and used the same as the the cold stone "stone slab" just different in name.
These can be installed by granite providers or custom commercial kitchen suppliers that can design one for your needs.
