Hello,

I used to adore ?Mud Pie? ice cream sandwiches (with vanilla or coffee ice cream) back in my childhoods days and don?t know if they are still being made. Does the company still exist? They were just like an Its It, but different flavors.

I found a recipe for frozen mud pie sandwiches - but I don't know if this was quite what you were looking for:

Frozen Mud Pie Sandwiches Ingredients

2 tb Sugar (http://www.bigoven.com/whatis.aspx?id=Sugar)
1 ts Stick margarine (http://www.bigoven.com/whatis.aspx?id=Margarine)
2 tb Light colored corn (http://www.bigoven.com/whatis.aspx?id=Corn) syrup
1/4 ts Vanilla (http://www.bigoven.com/whatis.aspx?id=Vanilla)
1 1/2 tb Unsweetened cocoa (http://www.bigoven.com/whatis.aspx?id=Cocoa)
1 1/4 c Coffee (http://www.bigoven.com/whatis.aspx?id=Coffee) low fat frozen
1 tb 1% milk (http://www.bigoven.com/whatis.aspx?id=Milk)
20 Chocolate (http://www.bigoven.com/whatis.aspx?id=Chocolate) wafer cookies

Instructions for Frozen Mud Pie Sandwiches

Combine first 4 ingredients in a small heavy saucepan, and bring to a boil over medium-low heat, stirring frequently with a whisk. Cook 2 minutes or until thick, stirring frequently. Remove from heat; stir in margarine and vanilla extract. Cover and chill thoroughly. Spread 2 tbsp yogurt onto each of 10 cookies; top with about 1 tsp toffee syrup and remaining cookies, pressing gently. Freeze at least 1 hour. NOTES : Per serving: cals - 103 - 30%ff fat - 3.4g
