as opposed to purchasing it...
We currently have a Taylor batch freezer that we use to make water ice. Everyone we know in the business thinks we're crazy that we don't make out own ice cream.
Here are some things I think about when wondering about making this leap:
This is only our third season and we're still learning!
It seems to me that we'd have to make a large investment in all of the ingredients to get started.
We'd lose our display dipping box, because that is supplied by Jack and Jill ice cream, from whom we currently buy our 3 gallon tubs.
We'd have to purchase a flash freezer.
We know NOTHING about overrun!
Any opinions on this? Other than the above, I think it would be a blast and would love to do it.
