Started in the Ice Cream Business in May of this year.... I started with a Ice Cream Bike and now what to buy a truck.... What is some of the pit falls in getting a truck. Should I go with cold plates... I will just be selling Novelties only for starters...

The key is just finding the right route and making sure your truck is appealing. No one will want to buy from an old run down looking truck. Also try to get invited for corporate sponsored events - that is an easy way to get a large flat fee for 2 - 3 hours of service and limited number of products sold.

Yes buy a cold plate freezer - they are much more efficient and do a better job of keeping the ice cream frozen at the right temperature.
They are also good when doing events and you will be parked for a long time as the freezer can be unplugged and not running on a generator for up to 10 hours (depending on how hot the day is) - while still keeping your ice cream frozen.
