How does one calculate the percentage of butterfat in an ice cream mix? Thanks!:confused:

What type of ice cream do you want to make? The % of butterfat determines what classification the ice cream receives:

The FDA (United States Food and Drug Administration), classifies the primary ice cream products supplied by the ice cream industry as follows:

Superpremium Ice Cream - High fat content, best quality ingredients and low overunn.
Premium Ice Cream - Higher fat content than regular ice cream with low overrun, and higher quality ingredients.
Regular Ice Cream - Finished product must not weigh less than 4.5 pounds per gallon.
Economy Ice Cream - Finished product must not weigh less than 4.5 pounds per gallon and generally sells for a lower price than regular ice cream.

Milk and cream have a ratio range of butterfat based on what the animal is eating and the time of year. The best way to determine butterfat is to have it tested by a lab.
