i'm creating a range of totally out there vegan ice creams - at the moment i've only ever made about 5 flavours and need alot of experience quickly for our busy cafe in london, i'll be looking for some advice from the pros.
first thing is: where can i find out the main differences between how different machines work?
i want to know which machine can best handle our ingredients (which are nut based rather than milk based)....
please post to me if you know where i may find these answers....
