I plan to start my own Italian ice business, i will be making my own italian ice flavours.I was making a list of the equipment needed, and some people say a blast freezer is compulsory to obtain the necessary consistency.A blast freezer happens to be very expensive equipment and my production is such that il be serving the ices in my shop.My question: is a blast freezer really necessary to justify the extra expenditure, or can i get the job done with normal freezers?
