I like the look of the Gelato Cases and the fact you can fit so many pans into such a small space.

I don't think I can use this machine for hard ice cream; the operating temp is to hi (-12C). I an not sure if I can use the 360mm (14.17") x 165mm (6.14") metal tubes?
Does anyone know of a good case like the one above I can use for hard ice cream?

One of the problems in the location I found was the amount of space I will have. It will be in a mall food court; only 10' to 12' of space (counter front). I would like to offer a lot of flavors.
I have the same problem, my customers can only see 8 of the 24 flavours I sell. It hasn't been a problem.
If they can see some ice cream and there's a flavour list they can see all is good.
I found the cast I would like to use; I just need to know what the correct refrigeration rang is and is it ok to use matal pans?

Ice cream and Gelato are two different animals.
I have 3 eight bucket ice cream freezers, they are all set at different temps for different ice creams.
I did check the temps at one time but I couldn't tell you what they are. The temps were set over time to get the best results.
The difference between right and wrong is the difference between how sore your arm is at night.
My soft serve is at 15 F. I think the hard is at 7 or 8 F.
The freezer I just looked at has a temp range of -10 to +10. Sounds about right.
Is using the metal pans ok?
Aside from needing to change out the pans every 5 minutes, do you see any other problems with using this case?

The more I do research I find that no one uses these cases and it must be for a good reason. I will take a step back and look for a more suitable case.
